Jean’s Salad Dressing. This will make about one cup of dressing. I use a Good Season’s cruet because it is well marked and makes measuring easy. Don’t use their dressing though, it is nasty stuff.

Ingredients

  • Two cloves garlic
  • 1/4 cup Balsamic vinegar
  • 3/4 cup Extra Virgin Olive Oil (don’t use the cheap stuff)
  • 1/8th tsp curry powder
  • 1/8th tsp chili powder
  • 1/4 tsp dried basil or three crushed fresh basil leaves
  • 1 packet Equal or 1 tsp sugar if you don’t like artificial sweeteners

Instructions

Cut the garlic cloves in half and put them in the container with the olive oil overnight. When ready to make dressing add the balsamic vinegar, Equal, curry powder, chili powder and basil. Shake it up really well and pour on any nice green salad.

You can tweak the seasonings any way you like. This is a good start and tastes soooo much better than bottled dressings.

Can be stored at room temperature or in the fridge, though it will “solidify” if its cold, and will need to warm up.
