• 6 english muffin slices (3 muffins), each slice cut in half
  • butter
  • 1 lb (jones) breakfast sausage
  • 1/2cup shredded cheddar cheese
  • 6 eggs, beaten
  • 2 cups half and half
  • 1 tsp salt
  • 1 tsp pepper


Lightly toast the muffins. Butter (optional) and place face up in lightly buttered 9×13 baking dish. Cook, crumble, and drain sausage. Spoon over muffins,and sprinkle cheese over the sausage. More cheese is better.

In a separate bowl combine eggs (beat if not done yet), half and half, salt and pepper. Mix well and pour over cheese. It should cover the english muffins and sausage. Cover, refrigerate overnight.

Remove from fridge 15 minutes before baking. Bake at 350 degrees for 45 minutes or until set.
